Process

Wet-hulled (giling basah)

Parchment removed while the beans are still moist.

In Indonesia’s giling basah process, cherries are pulped and the beans are partly dried before parchment is removed while they are still moist. The exposed beans are then dried further, producing a distinctive processing style.
