Process

Washed (wet process)

Fruit removed and the beans fermented clean before drying.

Ripe cherries are pulped, and the sticky mucilage left on the beans is broken down, usually by fermenting in tanks, then washed off before the beans dry.

Washed coffees tend to taste clean and transparent, with clearly defined acidity. Most of the character comes from variety, place, and roast rather than from the fruit.
